Doctoral sausage appeared in the last century on the territory of the Soviet space and quickly fell in love with people. This tradition is preserved to this day. On the shelves of stores there are always a lot of varieties of doctor sausage. But why is it called that?
A Brief History of Sausage
It is not known exactly when people began to produce this product. But mention of him appeared in ancient Greece and Rome. Then people did not have advanced technologies for production, because of which they could cook only simple types of sausage, among which the most common was black blood.
In the Middle Ages, more recipes and methods for making this product appeared, but not everyone could afford to put this treat on the table. For example, in Europe, sausage was considered an expensive treat.
In ancient Russia, sausage has long had a negative attitude. Since it contained a large amount of blood, its eating was considered a sin. Now sausage is widespread throughout the world. There are several dozen varieties with unique flavoring properties.
Why is the "doctoral" sausage so called?
The sausage got its name because of the purpose for which it began to be made. The first variation of this variety appeared in 1938. Then the People’s Commissariat of Health ordered the development of a diet sausage recipe that people with stomach problems could use.
Interesting fact: Doctoral sausage was primarily designed for people with poor health due to the Civil War.
Having tried several variations of the recipe, the chefs were able to identify a combination of ingredients, in total giving an excellent taste. The composition of this doctoral sausage is as follows:
- pork with a low fat content - 45%;
- pork without fat - 25%;
- first grade beef - 25%;
- chicken eggs - 3%;
- milk powder - 2%;
- seasonings.
This recipe did not contain harmful products and impurities, so people with a sick stomach could eat it. Because of this, the sausage was dubbed the "doctoral".
Sausage is called "doctoral" because it was invented for medicinal purposes. It does not contain harmful products in the composition, which is why it is easily absorbed even by a weak stomach.
